              La cucina italiana è il frutto di un secolare processo storico della nostra società, da sempre protagonista di significativi momenti della civilizzazione umana. Per una innata inclinazione degli italiani all’attenzione ai rapporti umani e della qualità della vita, la cultura della tavola è divenuta nel tempo il simbolo dell’ospitalità e dell’accoglienza, il cibo ha assunto un valore al pari dell’arte e della musica. Per questi motivi la cucina italiana deve essere considerata un contributo al patrimonio dell’umanità e va difesa e protetta dalle adulterazioni e dalle falsificazioni per salvaguardarne la storia, la cultura, la qualità e la genuinità.   In quest’ottica Unioncamere, sulla base dell’esperienza maturata con il marchio “Ospitalità Italiana”, portato avanti con il supporto operativo dell’Istituto Nazionale Ricerche Turistiche - IS.NA.R.T. - società delle Camere di commercio, ha promosso il progetto “OSPITALITÀ ITALIANA, RISTORANTI ITALIANI NEL MONDO” rivolto a tutti quei ristoranti italiani all’estero che garantiscono il rispetto di standard qualitativi tipici dell’ospitalità italiana.   Gli obiettivi del progetto sono: - sviluppare e promuovere le tradizioni dei prodotti agro-alimentari italiani e valorizzare la cultura enogastronomica italiana; - valorizzare l’immagine dei ristoranti italiani all’estero che garantiscono il rispetto degli standard di qualità dell’ospitalità italiana; - creare una rete internazionale che consenta la realizzazione di eventi promozionali delle eccellenze produttive italiane.   La valutazione dei requisiti avviene mediante interviste, esami documentali verifica delle modalità operative impiegate per lo svolgimento delle attività, sopralluoghi nelle diverse aree del ristorante. In relazione al grado di soddisfacimento del requisito viene attribuito un punteggio. La somma dei punteggi ottenuti per singolo requisito determina il livello di ospitalità del ristorante.
